This is not quite true.
You have to twist your head so much ingame because you have 60° FOV, so you need to rotate your head for at least 150° before you can see anything on your six. If you had 180° like you have in real life rotating for a bit more than 90° would be sufficient to at least know that there is a plane behind you.
To the topic: I sometimes have the feeling that zooming in to 30° FOV is a bit overkill, but with zoom disabled it is impossible for a player with standard setup to identify anything. This would just cause players with big, high resolution multi-monitor setups to have an extreme advantage over players with a standard 24'' HD monitor while we're not getting any closer to the "real thing".
While the system is not perfect, changing it radically would miss the point of reenacting WWII air warfare.

He means we have 180 FOV, so if you just turn your to 9 o'clock then you can see from 6 o'clock to 12 o'clock...

there's seeing and seeing ? our binocular vision means you only really see things clear straight on! with your head turned 90° it's like looking through a pint glass any further back.
