Hi Jonny - couple of choices:
1) (Easiest) Grab files from someone. I have a Spit II a but I never use it as (when I fly...) I fly hurricanes.

2) Open said IIa link and have a look at the ini files. These define the actual instruments. I don't have a manual, but it is fairly easy to work out what is going on and tweak them if you want to - this will give you an idea of how to create your own gauges if any are missing. Note you can switch gauges off by editing them out of the cockpit.ini file. The cockpit.ini file is the on where you set the position of gauges relative to each other and set any scales you may need.
Try all that, if you have problems then pm me and we can try and get something workign on TS (but note it has been a while so I'm somewhat rusty!)

Is this possible with a laptop? i.e using the laptop screen as a second screen, to show Virtual Cockpit. Not so easy as it doesn't have a video input port.

Yes, there's a client / server build if i recall correctly. You rub there server on the CloD box and (provided you are in the same LAN) you can run the instruments on a second machine. You'll have to Google it though, i don't have a copy.

Any chance it might work with a simple VGA cable?

Unless your laptop is actually a monitor and takes a VGA in ... no.
